Founded in 1997, Quinta Cova da Raposa (translated to Fox Den Farm) is a small organic farm in the heart of Braga, Minho. From day one, the winery's mission was to create and restore ecological balance in the vineyards and on the farm. Planted on terraced granite hills, husband and wife team Manuel Taxa and Elisabete Raposo farm Alvarinho, Avesso, and Vinhao using organic and some biodynamic methods with plenty of ground cover. In addition to the vineyards, they also grow nearly 30 varieties of fruits and veggies, medicinal herbs, aloe vera, have honey bees, make jams, and raise local breeds of sheep, chickens, and rabbits. The wines are made entirely in stainless steel and use little to no sulfur.
